Pumpkin Chai Latte Chia Pudding Recipe

This Pumpkin Chai Latte Chia Pudding is an incredibly simple and healthy fall breakfast, snack or dessert! Mixed up in minutes and with little cooking required, this recipe tastes like holidays.

 

With Fall welcoming Winter pretty soon, pumpkins are everywhere! During colder months, pumpkins literally dominate every recipe, and we are loving it! Moreover, a warm and cozy cup of our Chai Latte is the absolute golden elixir of the season as well.

 

The combination of pumpkin, our Chai Latte‘s herbs and spices, and chia seeds is phenomenal. Besides taste, each ingredient of this recipe offers amazing health benefits. 

What you'll need:

  • 1 tbsp Aladastra’s Chai Latte herbal blend
  • 1 cup Plant-based milk of your choice (soy, almond, coconut, oat)
  • 3 tbsp Pumpkin purée (homemade or store-bought)
  • 1/3 cup Chia seeds
  • 1 tbsp Sweetener of your choice (maple syrup, molasses, date syrup, honey)
  • Cinnamon sticks

Mix Chai Latte with hot plant-based milk and bring to shimer. Let it steep for 5 minutes, and strain into a cup.

 

Making pumpkin purée is pretty easy. Put a fair amount of cooked pumkin into a mixer and it’s done! You can either buy cooked pumpkin, or steam or boil it yourself. We always like to make a bit extra purée to use it in winter salads and other recipes. You can keep it refrigerated up to 3-4 days.

Step 2. Preparing the Pumpkin Chai Latte Chia Pudding

In a medium bowl, combine chia seeds, Chai Latte, 2 tbsp pumpkin purée, and sweetener, and stir gently until mixture is smooth and has an even consistency. Cover and chill for at least 4 hours or overnight.

Step 3. Top & Enjoy

Top with 1 tbsp pumpkin purée and a couple of cinnamon sticks for extra coziness. Enjoy cold!

 

Of course, any kind of topping of your choice will do! Leftovers can be stored in the fridge for 3-4 days.
